Fenugreek is a leguminous plant. Its hard seeds of a golden brown color are often used in Middle East and Indian cuisine as an aromatic spice. Fresh seeds have a bitter taste, but after processing and grinding they gain the nutty aroma.
Fenugreek seeds are used in food, cosmetics and medicine industry. They are an addition to the popular curry spice mixture and five spice powder and also to maple syrup. They also add complementary flavor to many dishes, eg. fish, meat, soups, some cheese and sauces. In the cosmetics industry they are used as an antidote for hair loss. Fenugreek is also a component of many medicines for gastrointestinal disease.
